Cream

 What is Cream?

Cream is another type of diary product that mostly form from the top layer of milk. This cream contains high fat layer of the top of the milk. It is basically the process of making cream from which the cream can be evenly mixes fat throughout the milk. This cream can be made from the high fat layer which can be form of the top of the milk before the homogenization of the milk. In short, we can say that the layer that can be form before the homogenization of the milk and that layer contains the high fat layer and from that layer the cream can be form. The cream can contain the milk fat which contains butter fat. This butter fat is very helpful to give the rich flavor and smooth texture to the cream. This cream can contain the rich flavor and smooth texture to the cream and can also contains the luxurious mouthfeel to the cream. 


Cream is a rich dairy product which is made by separating the high fat layer from the milk. This cream can be made by boiling the milk and after boiling the milk when the milk comes to rest then slowly a layer starting to form on that boiled milk and after some time a high thick layer start forming on the top of the layer and when that layer is separated from the milk and then from that layer the cream can be formed. In modern dairy production, this cream can be separated from milk by using centrifugal separator. This centrifugal separator spins the milk at high speed so that the lighter fat (cream) rises to the top and can be collected. 

Types of Cream: -  

Fresh Cream: - 
Fresh cream is also a type of dairy product that can be made by skimming the top layer of fat that layer comes from the milk. This cream can be directly obtained from the boiled milk. To obtained this cream firstly we have to give the boil to the milk and after boiling when the milk comes to the rest for cooling and in that cooling time a thick layer of fat made on the top of the milk and when we take that layer and can stir it continuously either with hand or by using the blender at that time the cream that can be obtained by stirring that cream is said to as fresh cream because that cream can be made from the fresh milk.


Uses: -

  • As this fresh cream is purely homemade cream or can be made from the type of fresh milk, so this cream is mostly used in various Indian dishes like Indian curries and Indian Gravies.
  • It can be used in the various Indian dishes at the end of the cooking to give richness, creaminess and shine to various gravies. 
  • This cream can be used to balance the spiciness of the gravies and to make the curries smooth and mild. 
  • This cream can also be used in various Italian dishes like in the white sauce pastas, makhani pasta, salads and sauces.
  • It also used in various soups to create the soup velvety and to maintain the consistency of the soup. 

Single Cream (Light Cream): -
Single cream is also known as light cream because the fat content in this cream is very less. The texture of this cream is very smooth and a type of pourable dairy cream which around 18-20% of milk fat. The content of milk fat in this cream is only about 18-20% which is very less due to which this cream is said to be as single cream or light cream. This type of light cream can be made by separating the fat layer from the whole milk. Because of the less content of fat, the texture of this cream is very light and very richer than milk but very lighter than whipping cream.  This single or light cream is not suitable for whipping because the fat content of this cream is very low and is not suitable or capable to hold the air, but this cream is excellent in pouring, enriching dishes and adding creaminess in various dishes.


Uses: -
  • As this cream is very light and can have less fat content so this cream can be used to pour over the desserts like it commonly used in pouring over the fruits, pudding, jellies and cakes to enhance the sweetness and it also gives the rich and creamy flavor to various types of desserts.
  • This cream can be used in various soups and sauces that can adds a smooth and velvety texture to soups, gravies and sauces. This cream should also be added after cooking. 
  • This cream has a very popular choice for lightening and enriching the hot beverages. This cream is also very useful to gives a luxurious creaminess without making the drink too heavy.

Double Cream: - 
Double Cream is a type of cream which is very similar to single cream or light cream. The only difference between single cream and double cream is that they can be differ in their quantity of the milk fat. The double cream is very thick and heavy. Double cream is rich, thick and can have a luxurious dairy cream. The double cream can contain up to 48% of the milk fat that make the double cream as one of the richest types of fresh cream. The texture of double cream is very smooth and velvety texture, and this cream can have a mild and sweet taste. 


Uses: -
  • The double cream is very rich in milk fat so this cream is more suitable and capable to be used as whipping cream because as this is a double cream which can have the capability to be whipped because as the milk fat in this cream is high so this cream can hold the air in it. 
  • After coming in the whipping cream form this cream can be sweetened or flavored with sugar, vanilla or cocoa.
  • This cream can also be served as a pouring cream on various types of desserts like fresh fruits, pies, cakes and jellies. By pouring on the desserts this cream can enhance the sweetness of the fruits, and it also adds a luxurious and creamy mouthfeel of the desserts in which this cream can be poured.
  • This cream can also be used in the preparation of various types of ice-creams and custards. This ream can be used as a base for homemade ice-cream, custards and creamy desserts.

Whipping Cream: - 
Whipping cream is also a type of cream which basically comes between the single cream and double cream because this cream can contain the 30-36% of the milk fat. This cream is lighter than double cream and can heavier than the single cream. Because this cream has the high quantity of milk fat so this cream can be capable of whipped because it has the capacity to hold the air and it can still be whipped to a fluffy consistency.


Uses: - 
  • The whipping cream is mostly or mainly used in as a topping for cakes, frosting and decorations. We can add any flavor in the cream to make the cream sweetened and flavorful. 
  • This cream can also be used in desserts like ice-cream, pudding and mousses.
  • This cream can also be used in hot dishes like in pasta sauces, in pasta toppings and soups.
