 What is Blue Cheese?

Blue cheese is also a type of cheese like the soft, hard, semi-soft and semi-hard cheese. Blue cheese doesn't mean that it is blue in color. Blue cheese is a type of cheese which is yellow in color and can have blue or green veins inside the cheese and these veins are completely visible from the cheese. Blue cheese is yellow in color because it is made up from cow's milk. Not only from cow's milk this cheese can also be made from sheep's milk and goat's milk, and the variants of this cheese can also be available in the market. The main variety of this cheese can be made from cow's milk and only that variety of milk can be mostly used in the market. Blue cheese is a category of cheese which is caused by edible mold which is introduced during production. The main molding of the cheese can be made from the cow's milk, and the blue and green veins of the cheese can be made from typically penicillium roqueforti and glaucum which is edible and the main veins of the cheese which gives main flavor to the cheese. 


Blue cheese is also called an aged cheese because this cheese can be aged from 2 to 6 months in humid environment. This type of cheese can be made by making the holes in the cheese with the help of 
pins. These pins can be made to enter the air in the cheese. When the fresh air enters in the cheese it helps to increase the size of the mold and can also help in the making of green and blue lines inside the cheese. The air in the cheese not only helps to increase the size of the cheese mold but it also helps to give a crumbly and pungent texture with sharp and tangy flavor ranging from mild to intensely earthy. 

Types of Cheese: -

Roquefort: -

Roquefort cheese is a type of blue cheese which is originally originating from France. Roquefort cheese is a type of cheese which is made up from sheep's milk and mainly from raw sheep's milk which is originally found from the limestone's caves of Roquefort-sur-Suzlon. Because it is a type of blue cheese then it has its crumbly texture and a creamy flavor which is intensely salty with a sharp and tangy bite. With the sharp and tangy bite, it also has a very strong aroma. This cheese is an aging cheese, and the aging period of this cheese is from 3-6 months. This cheese is also known as "king" of blue cheese because of its bold profile. 


Uses: -
  • This cheese can be mostly eaten as a table cheese which is mostly eaten with pears, walnuts or honey. This cheese can be eaten with all types of fruits, dry fruits and honey. 
  • Because of its crumbly texture it can be used in salads and can be crumbled as dressing in many dishes like soups and pasta and many other dishes also.
  • This type of cheese is also used in French cuisines, such as sauces for steaks and as a filling for pastries and can add depth to risottos or stuffed meats.

Gorgonzola: -

Gorgonzola is another type of blue cheese which is originated from Italy. Gorgonzola cheese can be made from cow's milk, and this cheese can be made from both the version which means this type of cheese cam be made from raw or pasteurized cow's milk. Because this cheese can be made from two type of milk so that's why this cheese can be available in two styles: - Dolce and Picante.



Dolce: - Dolce is a type of Gorgonzola blue cheese which is made from pasteurized cow's milk. Dolce cheese is a younger cheese which is soften in its texture and sweeter and creamier in its flavor. Because of pasteurized milk this cheese needs only 2-3 months for its aging process. This cheese is to be considered as younger cheese because it takes less time in its aging process. 


Uses: - 
  • As the flavor of this cheese is salty, tangy and can have a creamy and crumbly texture then this type of cheese can be eaten fresh or in a direct form.
  • This cheese can also be used in many types of desserts like cheesecake and can also be paired with fruits. 
  • This cheese can be eaten as a snack with light wines. 

Piccante: - Picante cheese is also a type of blue cheese which can be made from the raw cow's milk. The texture of this cheese is firmer and sharper. The smell and the flavor of this cheese is more pungent. The aging period of this cheese is from 4-6 months. The aging process of this cheese if very similar to Gorgonzola cheese is by inserting the pins in the cheese through which the air can move inside the cheese and through the movement of this air it can increase the size of the cheese, and the green and blue veins of the cheese can make from that movement.


Uses: - 
  • This type of cheese is crumbly in texture and because of its crumbly texture it is mostly used in Italian dishes like pasta, risotto and lasagna etc.
  • This cheese can also be used to prepare various sauces like pasta sauces, creamy sauces and various buttery creamy sauces. 
  • This cheese can also be used as toppings in pizzas and also used as topping for steaks.
  • The creamy sauces that can be prepared by using this cheese can also be used as various dips, and in baking.
  • This cheese can also be grated over various dishes because of its crumbly texture.  

Stilton: - Stilton is also a type of blue cheese which is also named as English cheese. Stilton cheese is an English cheese which is made from cow's milk. This cheese is very dense and crumbly in texture and moreover this cheese has its own special shape which is in cylindrical shape. This cylindrical shape of the cheese has a very rich and nutty flavor and a very sharp finish. The aging period of this cheese is from 4-6 months. This cheese can be traditionally served on Christmas which is very well-known for its creamy flavor. This cheese is a type of blue cheese but despite of being the type of blue cheese this cheese cannot have any blue or green veins from inside. 


Uses: - 
  • This type of cheese is mostly used as a dessert and that's why this cheese is also called as desserts cheese.
  • This desserts cheese can mostly be served with port wines, figs and biscuits and this cheese is classic in British Cheese Boards.
  • This cheese can be crumbled in salads or dressings. 
  • This cheese can also be used as melted in sauces in game meats or in toasts also like cheese toasts.
