Khakhra: -
Khakhra is basically a type of chapati that is made up from the whole wheat (which we called as Atta) but there are many of the differences between the chapati (roti) and the khakhra is that khakhra is very crispy and crunchy as compared to chapati. Khakhra is the traditional Indian roasted flat snack that mainly comes from Gujarat and Rajasthan. Gujarat and the Rajasthan are mainly the originators of the Khakhra because the can firstly made in the Gujrat only. Undoubtedly the khakhra is made by the Gujrat and Rajasthan but it's loved is not only limited to whole India, but it can exceed by the Indian Boundaries also. This snack is loved by millions of people because of its crispy and light texture and this type of snack is much healthier than the fried snacks. Khakhra is very thin and crisp flatbread that is mainly made from whole wheat flour along with spices and with a small amount of oil and ghee. The khakhra is mostly similar to the chapatti but unlike roti or paratha, khakhra is roasted on the Tava but in a slow way which means to prepare the khakhra the flatbread which is mainly made from the wholewheat is to be made in a proper circle shape and that wholewheat circle flatbread start slow roasted on the Tava until all the moisture is removed from the flatbread which makes the flatbread hard, crispy, crunchy and long-lasting. The khakhra is not fried but t can be roasted on the Tava, that's why this khakhra is to be considered as the healthiest option. The khakhra is mainly originated in Gujarat because these khakhras can be traditionally prepared by the Gujarat in households. The people of Gujrat can make many different types and many different flavors of khakhras at home and all the people of Gujrat made various types of khakhras especially for long journeys and storage, because khakhras is the type of items that does not spoil easily. This type of khakhras often eaten during breakfast, travel and fasting days or every evening during the teatime. In Gujrat times, khakhras is almost a type of daily staple like bread is in Western countries.
The khakhra that is made from the whole wheat can be made in the different types of flavors. Like when the people of Gujrat are making the Khakhras at that time they can add different types of spices like jeera, ajwain, or methi in the dough in the preparation of the Khakhra. When jeera is added in the dough then that Khakhra can be made up of jeera flavor and when ajwain is added in the dough then that type of khakhra is said to be as the ajwain flavor khakhra. The dough is rolled into very thin discs and then cooked slowly on low flame. While making the dough on the low flame the disc is being continuously pressed and continuously turned so that all the internal moisture is removed from the disc. This slow roasting process is the most important feature of khakhra, as it gives the hardness, crunchiness and the crispiness to the khakhra and allows it to be stored for weeks or even for months without spoiling or without getting contaminated that makes the khakhras very different from the soft rotis and fried snacks.
