The whey can be drained off without having to press or age the cheese.

Cottage cheese is consisting of curds that are drained but not pressed, and it may retain some whey. Cottage cheese has a lumpy texture and a slightly tangy and milky taste that comes in different forms such as small curd or large curd that may be sold with added cream to enhance its flavor. Cottage cheese is very high in proteins that's why it often used in salads, snacks and baking.
Ricotta: -
Ricotta is a type of traditional Italian cheese that can be made by the leftover whey. In the formation of cottage cheese, we can coagulate the milk after the coagulation We get cottage cheese and the whey, and the ricotta cheese can be formed from that leftover whey. Ricotta cheese has a fine and grainy texture along with slightly sweet and creamy flavor. Ricotta cheese is the key ingredient of many Italian dishes like lasagna, cannoli, and stuffed pasta. Ricotta cheese is very popular in desserts because of its smooth consistency.
Mascarpone: -
Mascarpone is another type of cheese which has very rich buttery cheese flavor made from cream and can have a soft and spreadable texture. Mascarpone basically originates in Italy that's why it is mostly used in Italy and Italian People like this cheese very much. Mascarpone has a high fat content and can have a mild and slightly sweet flavor. Mascarpone cheese is mostly used in desserts like tiramisu and cheesecake along with desserts it also enriches in various savory dishes and sauces.
Cream Cheese: -
Cream cheese is a type of cheese that has smooth and mild cheese which is made from a mixture of milk and cream. Cream cheese has a soft and spreadable consistency with a slightly tangy taste. This type of cream cheese is widely used as spread on bangles, in dips and in baking, especially for cheesecakes and frostings. Some versions of cream cheese are whipped or flavored with herbs and fruits.
Paneer: -
Paneer is a non-melting fresh cheese which is widely used in Indian cuisines. Paneer can be made by curdling the heated milk with lemon juice and vinegar. The process of making paneer is very simple to make the paneer firstly we have to boil the milk in extreme heat and add a little bit of lemon juice, vinegar or curd and after adding any particular things we get the solid substance and the water remaining in the pan. We get that solid substance and then presses it and after pressing we get the paneer. Paneer is firm but yet soft and absorbs the flavors of spices and sauces.
Mozzarella: -
Mozzarella cheese is a type of commonly aged cheese. Mozzarella is slightly firmness and with aged cheese it also exists in fresh form. Fresh mozzarella cheese is slight soft, moist and slightly flavored and are typically packed in brine or whey. Mozzarella is the key component of caprese salad, pasta, pizza and many Italian cuisines.
